Krista’s Coconut Curry Prawns

KRISTA’S COCONUT CURRY PRAWNS

INGREDIENTS

Prawns:
  • Oil
  • Garlic, minced
  • 1 lb Mitch’s Catch spot prawns, peeled and deveined
Curry:
  • 2 tbsp coconut oil
  • 3 medium shallots, diced
  • 3 cloves of garlic, minced
  • 1 ½ tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp ginger
  • 5 tbsp red curry paste
  • 1 ½ cups yellow potatoes, peeled and cut into bite sized pieces
  • 2 large carrots, peeled and diced
  • 1 400ml can coconut milk
  • 1 400ml can crushed tomatoes
  • 2 tbsp tamari
  • 1 tbsp maple syrup
  • 1 tbsp lime juice
For serving:
  • Cooked brown rice or quinoa
  • Roasted peanuts
  • Fresh cilantro
  • Lime wedge

She now runs her practice at Tall Tree Health in Victoria and she loves educating her patients about nutrition, while trying to inspire them to get creative in the kitchen! HOW TO

  1. Start by preparing the prawns and cooking the brown rice or quinoa. Use the instructions on the bag for your preferred grain!
  2. For the curry, heat a large pot over medium heat. Add coconut oil, garlic and shallot. Saute for several minutes.
  3. Add cumin, coriander, and ginger. Sauté for another minute. Add red curry paste and stir to combine. Let it cook for another 2 minutes.
  4. Add potatoes and carrots and stir. Cook for several minutes and add coconut milk, crushed tomatoes, tamari, and maple syrup.
  5. Reduce heat to a simmer and cook for 10 minutes while you prepare the garlic shrimp.
  6. For the garlic prawns, heat oil on a pan with your desired amount of garlic. I like A LOT of garlic for the garlic prawns!
  7. Add prawns. Cook until ready!
  8. Squeeze a lime over the prawns.
  9. Build your bowl! Start having the rice or quinoa as your base. Add the curry, prawns and whatever toppings you desire.
  10. Enjoy!
