Chili P Spot Prawn Skillet

Ingredients

  • 1lbs Spot Prawns, peeled
  • Half of a fennel bulb, sliced
  • 1 shallot, sliced
  • 1 cup cherry tomatoes, halved
  • 2-3 tbsp butter
  • 1 heaping tbsp of Chili P
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Sliced sourdough for dipping! (we love Nelson the Seagull)

HOW TO

  1. Start by peeling the spot prawns.
  2. Add butter to a hot cast iron pan.
  3. Add shallot, once softened add fennel and cherry tomatoes, sauté until fennel begins to soften – about 2 minutes.
  4. Add Chili P and stir well, sauté for another 2-3 minutes.
  5. Create a space in the centre of the mixture and add the prawns to the pan, cover and let cook for 2 minutes, mix and squeeze lemon.
  6. Serve with Nelson the Seagull sourdough and enjoy!
