Chili P Spot Prawn Skillet
Ingredients

1lbs Spot Prawns, peeled

Half of a fennel bulb, sliced

1 shallot, sliced

1 cup cherry tomatoes, halved

2-3 tbsp butter

1 heaping tbsp of Chili P

Juice of 1 lemon

Salt and pepper to taste

Sliced sourdough for dipping! (we love Nelson the Seagull)
HOW TO

Start by peeling the spot prawns.

Add butter to a hot cast iron pan.

Add shallot, once softened add fennel and cherry tomatoes, sauté until fennel begins to soften – about 2 minutes.

Add Chili P and stir well, sauté for another 2-3 minutes.

Create a space in the centre of the mixture and add the prawns to the pan, cover and let cook for 2 minutes, mix and squeeze lemon.

Serve with Nelson the Seagull sourdough and enjoy!
