Pacific Northwest Seafood Chowder

PACIFIC NORTHWEST SEAFOOD CHOWDER

INGREDIENTS

  • 1 lb of Mitch’s Catch Seafood (we use a combo of Halibut, Cod, Spot Prawn Tails and/ or Salmon)
  • Kernels from 2-3 corn on the cobs (thawed frozen kernels work too)
  • 8-10 cups of seafood stock
  • 2 tbsp of chopped chives
  • 2 tbsp of olive oil
  • 1/2 sweet onion finely chopped
  • 2 ribs of celery finely chopped
Important Prep Note:
Remove all Mitch’s Catch seafood from your freezer, take it out of the sealed packaging and place in your fridge the night before you want to enjoy it (morning of works too!).

HOW TO

  1. In a large stock pot heat olive oil, add onion, celery and corn kernels and sauté until slightly soft (8-10 minutes).
  2. Add the seafood stock and season with salt & pepper and bring to a light boil. Turn down to low, add your Mitch’s Catch Seafood and simmer for 5-8 minutes (don’t let it boil :))!
  3. Ladle into bowls and sprinkle with chives and parsley.
  4. Serve with a nice loaf of crusty bread and enjoy!
